Yoshimura Hideo Shoten, founded in 1915 in Iwade, Wakayama, and rebuilt around its Kurumazaka brand after the family's original Nada-Nishinomiya facility was damaged in the Great Hanshin Earthquake, brews using underground water drawn from the Kinokawa River and ages its sake in traditional mud-walled (dozo) storehouses. Kurumazaka Junmai Superieur - the brewery's Tokusen ("Special Select") Junmai - is crafted to showcase clarity within depth: a rounded, rice-forward umami balanced by a light, pleasant sourness and a clean, crisp finish, built to complement a wide range of everyday dishes rather than overwhelm them. It reflects the brewery's stated philosophy of pairing "transparency of flavor" with real rice character, aged in temperature-controlled underground and refrigerated storage before release.
