Founded in 1772 in Ishikawa Prefecture, in the hot spring town of Yamanaka Onsen, Matsuura Shuzo draws on centuries of craft tradition. Under 14th-generation owner-brewmaster Fumiaki Matsuura, the brewery crafts an understated yet compelling style of sake favored by connoisseurs. Their Shishi no Sato sake delivers subtle aromas, clean flavors, and a firm structural backbone. Traditionally enjoyed only locally and in select Tokyo restaurants, this sought-after sake is now available in limited quantities in the US. “Shun” Junmai Ginjo is soft, elegant and lightly fruity, making it extremely versatile for pairing, though it shines with delicate seafood like fluke, squid and seabream.
