Senjo Junmai Daiginjo

Founded in 1866 as Taimatsu Sake Brewery, Senjo Brewery emerged during Japan’s historic transition to global trade. Originally one of the founder’s many ventures, the brewery grew alongside the local community, becoming a festive staple during hanami and regional celebrations. Senjo takes its name from Mt. Senjo-ga-take, a 3,000-meter peak in the Japanese Alps whose pure snowmelt feeds the 60 meter-deep well water at the heart of their sake. Brewed with Kyokai 1801 yeast and local rice polished to 40%, this Junmai Daiginjo gives a round mouthfeel with juicy flavors of tropical fruit balanced with star anise, and a soft finish. Highly recommended for pairing with richer fare like Caesar salad and fried seafood.
