Pastoral Beauty Hojo Biden Yamahai Junmai
Founded in 1922 in Fukuoka Prefecture, Mii no Kotobuki is nestled along the Koishiwara River against the dramatic Mino mountain range. Inspired by Bordeaux winemaking, the brewery pioneered a shift in 1982 to abandon cheap fortified sake and focus exclusively on artisanal Junmai styles. Led by fourth-generation owner Tadatsugu Inoue and a small dedicated team, they craft exceptional sake using prized local Itoshima Yamada Nishiki rice. This unwavering commitment to quality and innovation has earned Mii no Kotobuki a passionate following among connoisseurs worldwide. “Pastoral Beauty” Yamahai Junmai is a bold style meant to pair with rich local Kyushu cuisine. The sake is aged for two years for the flavors to blend. The sweetness and acidity gives it a depth that can pair well with rich food like spicy hot pot and miso marinated dishes.
