This Junmi Genshu (undiluted Sake) balances sweetness, acidity, and bitterness with a dry forward Ginjo aroma. You can feel wild acidity and dryness, after which umami hits you. When warmed, it changes to a sophisticated tranquil taste with bitter mellow acidity.
