Sitting above Ilaka Sake Atelier's five-bottle Silver (Gin) series is the brewery's ultra-premium Gold tier, a limited bin-kan (bottle-warmed maturation) bottling built to showcase the full depth the young Nagano brewery can achieve. Brewed with Kinmon Nishiki rice grown in Matsukawa Village and the brewery's signature ultra-soft Northern Alps spring water, then matured using the traditional bin-kan method of gently warming the sealed bottle to round out and deepen the flavor, it represents the pinnacle of the Ilaka range - priced and positioned well above the Silver series as a rare, occasion-worthy pour. Exact tasting notes for this specific bottling are not yet widely published; expect a richer, more layered profile than the Silver series, in keeping with the brewery's ethos of pressing at sub-zero temperatures and hand-tending each individual tank as its own "masterpiece."
