Founded in 1837 in Hyogo Prefecture, Sanyohai benefits from the ideal microclimates of the Banshu region. Drawing soft water from the Hyonosen mountain watershed, the brewery exclusively uses local elite grains for exceptional depth and clarity. Led by seventh-generation brewer Yuichi Tsubosaka, Sanyohai meticulously captures the unique terroir of the region in every bottle. Their flagship brand “Banshu Ikkon” Yamada Nishiki Junmai Ginjo is made with local Grade A Yamada Nishiki rice polished to 55% and soft water from the Ibo River. Although it has a lean structure, it starts luscious and fruity then finishes with notes of white pepper. Enjoy on its own or with richer foods.
