
Akashi-Tai Tokubetsu Honjozo
Think of this as the front door into Akashi-Tai’s connoisseur range. Brewed with 100% Gohyakumangoku rice, polished to 60%, this Tokubetsu Honjozo carries a small, traditional addition of brewer’s alcohol — not to cut corners, but to lift the aromatics and sharpen the sake’s clean, dry profile, a technique that’s been part of honjozo brewing for generations.
It’s medium-bodied with a creamy texture that belies its dryness — the kind of sake that’s equally comfortable next to a plate of sashimi or a bowl of something rich and savory.
Tasting notes: Lime, lemon, and straw on the nose → a dry, citrus-forward palate with a smooth, well-balanced finish
Pairs beautifully with: Grilled or BBQ meats, miso and teriyaki dishes, sashimi, or a sharp cheddar
