Toji Miho-san employs innovative brewing techniques, including one year of bottle aging, to bring forth a rich texture and robust umami flavors in Eternal Embers. This sake draws inspiration from a local “river-crossing” festival, wherein an ancient Japanese prince is reunited with his beloved princess. Torches are used to light the way to their joyous once-yearly reunion. Boasting aromatics reminiscent of bread pudding—raisin, nut, and fig—the Yuho sake is characterized by abundant umami without being cloying, perfect both warmed and slightly chilled.
