“No rules, just sake,” is the motto of Wakaze Brewery. Established in 2019, Wakaze is based in France and is truly a French-made sake with sake that is adapted to the French climate, made with French rice and fit for a modern palate. The two friends/entrepreneurs behind the brewery emphasize “one part tradition, one part science, and one part innovation.”
