Toko’s sake, a pinnacle of indulgence, is crafted from Yamada Nishiki rice, meticulously milled to 35%. Only gravity-released liquid at fermentation’s end, devoid of force, is bottled. Resulting in a complex brew. These particular ones on sale are from 2022 April, but it still boasts notes of lychee, wild strawberry, and grapefruit, culminating in a seamless finish with concentrated white pepper. Founded in 1579, Toko is one of Japan’s oldest active breweries. The Kojima family, exclusive sake purveyors to the renowned Uesugi samurai clan, earned a status akin to samurai royalty. Situated in Yonezawa, known for its warrior legacy, Toko, led by 24th-gen president Kenichiro Kojima, preserves a rich heritage.
