Ohmine 3Grain Yamadanishiki is an entry level Junmai Daiginjo from Ohmine Shuzou, a sake brewery located in Mine City, Yamaguchi. Resuming operations in 2010 after a 50-year hiatus, the brewery unveiled a state-of-the-art facility in 2018, reflecting the passion and vision of Toji and owner Akiyama-san. Collaborating with Pharrell Williams and Nigo since 2020, they aim to revolutionize the craft sake industry. The sake offers a sweet and rich aroma of white peaches with layers of minerality. The scent is reminiscent of the greenery in the Akiyoshidai grassland of Yamaguchi. Well-balanced combination of muscat and pineapple, complemented by minerality. The finish is described as bitter, like Matcha, yet sweet, resembling coconut. Ohmine has mastered the delicate balance of acidity and fruitiness, overcoming challenges in sake production such as bacterial interference.
