Description
Ohmine’s 2Grain sake is crafted through a meticulous brewing process focused on controlling bacteria to achieve the desired taste. Specifically, they minimize bacteria responsible for unwanted flavors (zatsumi) while increasing those involved in alcohol fermentation, breaking down grain starch. This challenging method is exclusive to 2Grain, earning it the No.1 GOLD prize at SAKE COMPETITION 2023 among 1,000 entries. The brew itself presents a juicy taste reminiscent of pear and white peaches, with notes of sugarcane and roasted almond in the middle. The finish exhibits a bitterness akin to cacao and orange peel. Ohmine Shuzou, based in Mine City, Yamaguchi, resumed operations in 2010 after a 50-year hiatus and unveiled a state-of-the-art facility in 2018. Collaborating with Pharrell Williams and Nigo since 2020, they’re at the forefront of revolutionizing the craft sake industry. Ohmine’s expertise lies in achieving the delicate balance of acidity and fruitiness, overcoming challenges like bacterial interference, and employing innovative techniques such as precise temperature control and achieving the ideal alcohol content.
