Miyasaka brewery has been in business for more than 350 years in Nagano, located in central Japan. In 1946, “Kyokai No. 7 yeast” was discovered as an excellent sake yeast for new sake. This was not a bred yeast, but a “Kura-attached yeast” that had taken up residence in the brewery. Today, about 60% of all breweries in Japan use this yeast. Nanago (Number Seven) is brewed with local Kinmon Nishiki rice and Masumi No. 7 Yeast in the traditional yamahai style. Aromas of ripe bananas, yellow peaches, and hints of cereal. It has a natural, mild aroma, and a well-balanced taste. It goes well with dairy products such as butter and cheese, as well as mushrooms and other foods with strong personalities.
