“Hiyaoroshi” is typically available on in the fall or winter. It is pressed in March, kept fresh in cool storage throughout the summer, and then “awakened” in early autumn. It is fragrant, with a carefully balanced sweetness and acidity. This sake pairs especially well with earthy dishes, like eggplant, mushrooms, and root vegetables, as well as roasted meats.
