Description

Kaetsu Brewery is an outlier in Niigata whose prefectural style is light, clean and dry, “tanrei karakuchi.” Instead, Kaetsu brews bold, intense sake that is “muroka” style (not charcoal filtered). The brewery is run by a husband and wife team who come from families with sake backgrounds and a master brewer with over 50 years of sake brewing talent. Kanbara “Bride of the Fox” is inspired by local legends that tells of mysterious lights that are claimed to be lanterns in a fox-bride procession.
