Located in central Kanagawa prefecture just an hour away from Tokyo is Izumibashi Shuzo, a boutique brewery and one of the few that grow and polish their own rice. The kura’s employees work tirelessly with local farmers to produce high-quality rice. Their lineup of all-junmai sake is elegant and classic. This very special kimoto, made with rare Rakufumai rice polished to 35%, delivers rich aromas of ripe fruit and hints of anise and coconut milk. Recommended as an aperitif but equally enjoyable at any time during the meal.
