Hakkaisan Brewery is situated at the foot of sacred Mt. Hakkaisan in Niigata, Japan. This region is famous for its deep winter snowfalls which can reach over 10 feet. Hakkaisan’s brewing water starts as pure snow and after being lightly filtered by the mountain soil, springs forth at the base of Hakkaisan Mountain. This Junmai Daiginjo is an iconic example of the Niigata region’s brewing style using handmade koji and pure spring water from melted snow. This keeps sake clean, crisp, and super dry edge. Pairs well with lighter and cleaner dishes such as raw fish dishes such as sashimi and carpaccio, and also fresh vegetable dishes such as caprese or beet salad. Simply beautiful sake!
