Hakkaisan Clear Sparkling “AWA” is made using a secondary in-bottle fermentation to create a clear and elegant sake. Using Gohyakumangoku, Miyamanishiki, and Yamadanishiki rice polished to 50%, the brewer creates brews a traditional junmai ginjo sake before a secondary in bottle fermentation.
