Senjo-ga-take, a 3,000-meter peak in the Japanese Alps whose pure snowmelt feeds the 60 meter-deep well water at the heart of their sake. Brewed with Kyokai 1801 yeast and local rice polished to 40%, this Junmai Daiginjo gives a round mouthfeel with juicy flavors of tropical fruit balanced with star anise, and a soft finish.
