Angelica, licorice, chicory, and ukogi form the backbone, while the final signature note comes from black cumin, an ingredient founder Tatsuya \"Moto\" Motonaga reportedly searched for for years before finally sourcing it on a trip to Hong Kong. The botanicals are macerated in neutral sugarcane spirit and rested in stainless steel. The nose is earthy and aromatic, with angelica root, Earl Grey tea, and bright lemon peel; the palate opens warm and sweet before unfolding into alpine herbs, cacao, grapefruit, and rosemary, finishing with orange peel, dandelion root, and a resinous hint of pine. Bottled at 27% ABV, it's a genuinely versatile amaro — delicious neat, over ice, topped with tonic, or built into a White Negroni.\u003cbr\u003e\u003cbr\u003eABOUT THE DISTILLER\u003cbr\u003eScarlet is the creation of Motonaga, a former bartender who worked in some of Japan's most respected bars — including Bar Caol Ila and Bar BenFiddich — before a trip to Europe convinced him to bring amaro-making to Japan himself.
