The brewery is led by Shoichi Sato who is both president and head toji (brewmaster). Sato is known for experimenting with rice varietals and different fermentation methods, pushing the envelope on sake brewing in ways that still retain the Yamagata style. “Rice Label” Junmai is not your typical junmai sake; it is expressive in aroma with layers of toasted grains and lush tropical fruit, with a medium body, glossy texture and soft but dry finish. Don’t overlook it’s minimalist label.
