Description
Located in central Kanagawa prefecture just an hour away from Tokyo is Izumibashi Shuzo, a boutique brewery and one of the few that grow and polish their own rice. The kura’s employees work tirelessly with local farmers to produce high-quality rice. Their lineup of all-junmai sake is elegant and classic. This balanced nigori (aka “cloudy” sake) is not too sweet and can be enjoyed during a meal. Yamada Nishiki rice is polished to 70% and the delightful carbonation comes from secondary fermentation after bottling.
