Dewazakura “Tobiroku Sparkling”

$18.00

Tobiroku has been produced using a secondary fermentation method to create the kind of champagne-like qualities that are present in sparkling sake. The sake has a clean and unassertive aroma of melon, light fruit and traces of cucumber. It's a light, dry, crisp sake that’s effervescent, fun and refreshing.

Description

Tobiroku is a sparkling, cloudy sake with a 50% rice polishing ratio. It is fun to drink with a wide range of foods. It’s likely to appeal to aficionados of Belgian beer and champagne, but satisfies sake purists as well. Airy, light and elegant, it has a star-inspired name that’s sure to bring joy on a night out with friends.

Dewazakaru brewery has strived for excellence in their craftsmanship. Founded in 1892 in the town of Tendo, the brewery has been releasing award-winning sake for generations. The area is surrounded by high mountains and hot during the summer and snowy in the winter. Its unique climate makes it an important production area for rice. Using this great rice, they have been making sake by hand, using small tanks enough to handle manually. It makes precision temperature control possible, which in turn allows us to brew high-quality sake in small quantities.
