Chef Nobu generously agreed to open the restaurant on a normally closed Monday night just for this event, as this is an extremely rare and special opportunity!

Joining us is Stephen Lyman, visiting all the way from Fukuoka, Japan, and widely recognized as one of the leading shochu experts.

Stephen Lyman is the author of the James Beard Award nominated book “The Complete Guide to Japanese Drinks”. Currently based in Fukuoka, Japan, he is working on a shochu documentary, helps make handmade sweet potato shochu at Yamato Zakura Distillery every fall, and has been designated as a Honkaku Shochu and Ryukyu Awamori Ambassador by the Japanese Cabinet Office. His deep appreciation for koji-based spirits inspired him to help launch Honkaku Spirits, and he co-hosts Japan Distilled with Christopher. He has done all this with one goal in mind: to realize his dream of being able to enjoy shochu and awamori in every bar in America.

Together, we’ll explore the fascinating world of shochu — one of Japan’s most beloved domestic spirits — known for its regional styles and wide range of flavors, from sweet potato to barley, rice, brown sugar, and more. Stephen will guide us through the traditions, ingredients, and techniques behind this complex and soulful drink.

The evening includes a special bento box-style dinner inspired by shochu, prepared by Chef Nobu and Chef Masaya of Sushi Taro.
